zucchini orange bread

Using fresh oranges is key in this bread for the flavor to really shine through. However, I have made it without adding the zest and using store bought orange juice and the bread still turns out very tasty.

Ingredients

  • 4 - eggs
  • 1 1/2 cups sugar
  • 3/4 cup oil
  • 2/3 cup orange juice
  • 2 cups shredded, unpeeled zucchini
  • 3 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 1/2 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 2 teaspoons grated orange peel
  • 1/2 cup chopped nuts, optional
  • GLAZE
  • 1 cup powdered sugar
  • 2-3 teaspoons orange juice

How To Make zucchini orange bread

  • Step 1
    Preheat oven to 350 degrees. Grease and flour bottom only of 2 9x5" loaf pans.
  • Step 2
    In large bowl beat eggs until thick and lemon colored; gradually beat in sugar. Add oil, 2/3 c. orange juice, and zucchini. Stir just until combined.
  • Step 3
    Stir in remaining bread ingredients. Mix well. Pour into prepared pans.
  • Step 4
    Bake at 350 for 45-55 minutes or until toothpick inserted in center of bread comes out clean. Cool 10 minutes then remove from pans and cool slightly on wire rack.
  • Step 5
    Mix glaze ingredients. Spread over warm loaves. Cool completely then wrap in tin foil. Store in refrigerator
