zucchini orange bread

Using fresh oranges is key in this bread for the flavor to really shine through. However, I have made it without adding the zest and using store bought orange juice and the bread still turns out very tasty.

Ingredients
- 4 - eggs
- 1 1/2 cups sugar
- 3/4 cup oil
- 2/3 cup orange juice
- 2 cups shredded, unpeeled zucchini
- 3 1/4 cups flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 1/2 teaspoons cinnamon
- 1/2 teaspoon cloves
- 2 teaspoons grated orange peel
- 1/2 cup chopped nuts, optional
- GLAZE
- 1 cup powdered sugar
- 2-3 teaspoons orange juice
How To Make zucchini orange bread

Step 1Preheat oven to 350 degrees. Grease and flour bottom only of 2 9x5" loaf pans.

Step 2In large bowl beat eggs until thick and lemon colored; gradually beat in sugar. Add oil, 2/3 c. orange juice, and zucchini. Stir just until combined.

Step 3Stir in remaining bread ingredients. Mix well. Pour into prepared pans.

Step 4Bake at 350 for 45-55 minutes or until toothpick inserted in center of bread comes out clean. Cool 10 minutes then remove from pans and cool slightly on wire rack.

Step 5Mix glaze ingredients. Spread over warm loaves. Cool completely then wrap in tin foil. Store in refrigerator
