Great recipe to use when you have an abundance of zucchini.
My grandkids love it. They don't know it's loaded with fruit and vegi's.

Ingredients

4 c
sugar
4
egg
1 c
margarine (melted)
6 1/4 c
flour
4 tsp
cinnamon
2 tsp
baking soda
2 tsp
salt
2 tsp
nutmeg
1 tsp
baking powder
4 c
zucchini (shredded & unpeeled)
1 c
carrots (peeled & shredded)
8 oz
pineapple, crushed with juice
3 c
nuts (chopped)

How to Make Zucchini Nut Loaf

Step-by-Step

  • 1Cream eggs and sugar, add margarine, mix till creamy
  • 2Blend all dry ingredients. Then add to creamed mixture
  • 3Mix carrots, zucchini and pineapple with juice. Then add to mixture. Then add chopped nuts if desired.
  • 4Pour into 4 bread pans.
  • 5Bake at 350 for 60 minutes
