Great recipe to use when you have an abundance of zucchini.
My grandkids love it. They don't know it's loaded with fruit and vegi's.

Ingredients

  • 4 c
    sugar
  • 4
    egg
  • 1 c
    margarine (melted)
  • 6 1/4 c
    flour
  • 4 tsp
    cinnamon
  • 2 tsp
    baking soda
  • 2 tsp
    salt
  • 2 tsp
    nutmeg
  • 1 tsp
    baking powder
  • 4 c
    zucchini (shredded & unpeeled)
  • 1 c
    carrots (peeled & shredded)
  • 8 oz
    pineapple, crushed with juice
  • 3 c
    nuts (chopped)

How to Make Zucchini Nut Loaf

Step-by-Step

  1. Cream eggs and sugar, add margarine, mix till creamy
  2. Blend all dry ingredients. Then add to creamed mixture
  3. Mix carrots, zucchini and pineapple with juice. Then add to mixture. Then add chopped nuts if desired.
  4. Pour into 4 bread pans.
  5. Bake at 350 for 60 minutes
