Great recipe to use when you have an abundance of zucchini. My grandkids love it. They don't know it's loaded with fruit and vegi's.

makes 4 loaves
Ingredients
- 4 cups sugar
- 4 - egg
- 1 cup margarine (melted)
- 6 1/4 cups flour
- 4 teaspoons cinnamon
- 2 teaspoons baking soda
- 2 teaspoons salt
- 2 teaspoons nutmeg
- 1 teaspoon baking powder
- 4 cups zucchini (shredded & unpeeled)
- 1 cup carrots (peeled & shredded)
- 8 ounces pineapple, crushed with juice
- 3 cups nuts (chopped)
How To Make zucchini nut loaf

Step 1Cream eggs and sugar, add margarine, mix till creamy

Step 2Blend all dry ingredients. Then add to creamed mixture

Step 3Mix carrots, zucchini and pineapple with juice. Then add to mixture. Then add chopped nuts if desired.

Step 4Pour into 4 bread pans.

Step 5Bake at 350 for 60 minutes
