Ingredients

1/2 cvegetable oil

2 csugar

2eggs

1 tspvanilla extract

3 cflour

1 tspnutmeg

1 tspcinnamon

1 tspbaking soda

2 tspbaking powder

1 tspsalt

2 cpeeled, seeded, grated zucchini

1 cchopped walnuts
How to Make Zucchini Nut Bread
- Combine oil, sugar, eggs & vanilla; mix well.
- Sift together flour, nutmeg, cinnamon, soda, baking powder, and salt. Add to first mixture.
- Add grated zucchini and walnuts. Spoon batter into two greased and floured loaf pans. Bake at 350 degrees 1 hour or until loaves test done. I use Pampered Chef's stoneware mini loaves pan, gives me 4 small loaves.
- Note: 1 cup chopped dates or raisins may be added, if desired.
