This is an old recipe that dates back to the 70's. It is tasty and moist! I always add extra cinnamon and lemon peel!

Ingredients
- 1 cup grated unpealed zucchini
- 1 cup sugar
- 1 - egg
- 1/2 cup cooking oil
- 1 1/2 cups all purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon baking powder
- 1/2 teaspoon grated lemon zest
- 1/2 cup chopped walnuts or pecans
How To Make zucchini nut bread

Step 1In a mixing bowl beat zucchini, sugar, and egg together.

Step 2Add oil; mix well.

Step 3Stir together flour, cinnamon, salt, soda, nutmeg, baking poder, and lemon peel.

Step 4Stir into zucchini mixture, and fold in nuts.

Step 5Bake 325 until done, 60-65 minutes. Cool in pan for 10 minutes and then remove to cool thoroughly.
