This is an old recipe that dates back to the 70's. It is tasty and moist! I always add extra cinnamon and lemon peel!

Ingredients

grated unpealed zucchini
1 c
sugar
1
egg
1/2 c
cooking oil
1 1/2 c
all purpose flour
1 tsp
ground cinnamon
1/2 tsp
salt
1/2 tsp
baking soda
1/2 tsp
ground nutmeg
1/4 tsp
baking powder
1/2 tsp
grated lemon zest
1/2 c
chopped walnuts or pecans

How to Make Zucchini Nut Bread

Step-by-Step

  • 1In a mixing bowl beat zucchini, sugar, and egg together.
  • 2Add oil; mix well.
  • 3Stir together flour, cinnamon, salt, soda, nutmeg, baking poder, and lemon peel.
  • 4Stir into zucchini mixture, and fold in nuts.
  • 5Bake 325 until done, 60-65 minutes. Cool in pan for 10 minutes and then remove to cool thoroughly.
