Zucchini Nut Bread

This is an old recipe that dates back to the 70's. It is tasty and moist! I always add extra cinnamon and lemon peel!
Ingredients

1 cgrated unpealed zucchini

1 csugar
-
1egg
-
1/2 ccooking oil
-
1 1/2 call purpose flour
-
1 tspground cinnamon
-
1/2 tspsalt
-
1/2 tspbaking soda
-
1/2 tspground nutmeg
-
1/4 tspbaking powder
-
1/2 tspgrated lemon zest
-
1/2 cchopped walnuts or pecans
How to Make Zucchini Nut Bread
- In a mixing bowl beat zucchini, sugar, and egg together.
- Add oil; mix well.
- Stir together flour, cinnamon, salt, soda, nutmeg, baking poder, and lemon peel.
- Stir into zucchini mixture, and fold in nuts.
- Bake 325 until done, 60-65 minutes. Cool in pan for 10 minutes and then remove to cool thoroughly.
