This is my favorite bread recipe from my friend Mrs. Higgy in Pascagoula. I like it so much that I baked I don't know how many one Christmas and gave the delicacies to all the teachers in my English Department at Woodham High School and to lots of other teachers and administrators. I included a copy of the recipe, and many of my friends made the bread themselves. Very moist and absolutely delicious!

Ingredients

  • 3 - eggs
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 1 - large unpeeled zucchini, grated
  • 2 - small carrots, grated
  • 2 teaspoons vanilla extract
  • 3 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped pecans

How To Make zucchini-carrot bread

  • Step 1
    Combine eggs, oil, and sugar.
  • Step 2
    Add vanilla, zucchini, and carrots.
  • Step 3
    Sift together dry ingredients and add to other. Add nuts.
  • Step 4
    Bake in two greased bread pans at 350 for 40 minutes.
