zucchini-carrot bread

This is my favorite bread recipe from my friend Mrs. Higgy in Pascagoula. I like it so much that I baked I don't know how many one Christmas and gave the delicacies to all the teachers in my English Department at Woodham High School and to lots of other teachers and administrators. I included a copy of the recipe, and many of my friends made the bread themselves. Very moist and absolutely delicious!

Ingredients
- 3 - eggs
- 1 cup vegetable oil
- 2 cups granulated sugar
- 1 - large unpeeled zucchini, grated
- 2 - small carrots, grated
- 2 teaspoons vanilla extract
- 3 cups sifted all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup chopped pecans
How To Make zucchini-carrot bread

Step 1Combine eggs, oil, and sugar.

Step 2Add vanilla, zucchini, and carrots.

Step 3Sift together dry ingredients and add to other. Add nuts.

Step 4Bake in two greased bread pans at 350 for 40 minutes.
