My daughter Noel makes the best veggie and fruit breads... This one is a family favorite! Sometimes she puts optional ingredients in... sometimes she makes a simple zucchini bread... She likes to make it different ways depending if she wants to make it a meal side or a dessert. I was lucky to be at her home while she was making a few different types... Play With Your Food! xo

Ingredients

  • DRY INGREDIENTS
  • 4 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons cinnamon
  • 1/2 teaspoon each: ground nutmeg, ground cloves, ground ginger
  • 3 cups sugar
  • 1 cup brown sugar
  • WET INGREDIENTS
  • 5 large eggs, beaten
  • 2 tablespoons lemon juice, fresh
  • 1 tablespoon vanilla extract
  • 1 cup applesauce, unsweetened
  • 1/2 cup oil
  • ZUCCHINI
  • 4 cups zucchini, shredded
  • 2 tablespoons lemon zest, grated
  • ADDITIONAL OPTIONAL INGREDIENTS
  • 1 cup pecans, chopped (or walnuts)
  • 1 cup chocolate chips, mini
  • 1 cup rainins

How To Make zucchini bread, noel's

  • Step 1
    Grease and flour two large loaf pans or 2 large muffin tins. I have large loaf pans (10 x 6)
  • Step 2
    Pre heat oven to 350 degrees.
  • Step 3
    Put all dry ingredients into a bowl and stir together. Form a "well" , set aside until needed.
  • Step 4
    Beat the eggs, add remaining wet ingredients. Mix together well. Pour liquid mixture into the "well" of the dry ingredients.
  • Step 5
    Mix together to form batter.
  • Step 6
    OPTIONAL ingredients can be stirred in at this time. Chocolate, raisins, yogurt or white chocolate raisins, craisins, chocolate chips or chunks.

    Add shredded carrot ( optional) and shredded zucchini, and stir until evenly distributed.

    Distribute batter into pans or muffin tins.
  • Baked Zucchini Bread
    Step 9
    Bake zucchini bread for 45 to 55 minutes (until a toothpick comes out clean).
  • Step 10
    Bake zucchini muffins for 25 to 35 minutes (or until a toothpick comes out clean).

    Completely cool in pans before removing, wrapping, bagging, freezing or storing.
