This is a terrific recipe that a good friend (that I used to work with)gave me. I have made it often ever since then. It is so moist and flavorful, I know that you and yours will enjoy it too!

Ingredients

  • - there is an additional 20 minutes for cooling time that is not included in the time estimate above.
  • 3 - eggs
  • 1 cup canola oil
  • 2 cups brown sugar, packed
  • 3 teaspoons real vanilla extgract
  • 1 tablespoon molasses
  • 4 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 2 teaspoons cinnamon, ground
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon walnuts or pecans, coarsely chopped
  • 3 cups zucchini, grated

How To Make zucchini bread (doris christoph's)

  • Step 1
    Beat eggs, oil and brown sugar. Beat well. Add vanilla, zucchini and molasses and beat. Add dry ingredients and nuts last. Bake in greased and floured loaf pans for 50 minutes in a 350 degree oven. Cool in pans 15-20 minutes before removing. Makes 2 loaves.
