- 3 - eggs
- 2 cups sugar
- 1 cup oil
- 2 cups grated zucchini
- 1 tablespoon vanilla
- 1 cup chopped walnuts
- 2 cups flour
- 1/4 teaspoon baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3 teaspoons cinnamon

Step 1Oven to 350 degrees. Cream eggs and sugar. Add oil slowly and beat well. Add zucchini and dry ingredients. Mix well. Add vanilla and nuts. Pour into 2 greased loaf pans. Bake 1 hour and 10 minutes.
