zucchini bread

This is a combination of several recipes I found. A great way to use zucchini when your garden floweth over! :)

Ingredients

  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup butter, softened
  • 3/4 cup vegetable oil
  • 4 - eggs
  • 1 1/4 cups sugar
  • 1 cup brown sugar
  • 2 teaspoons vanilla
  • 2 cups finely shredded zucchini, unpeeled
  • 1 cup chopped pecans or walnuts

How To Make zucchini bread

  • Step 1
    Heat oven to 325. Grease and flour 2 large loaf pans or 4 small ones.
  • Step 2
    In mixing bowl, combine butter, oil, eggs, sugars and vanilla until well blended. Combine flour, soda, powder, cinnamon and nutmeg. Add flour mixture to sugar mixture.
  • Step 3
    Add zucchini and nuts; stir in by hand. Spoon into prepared pans. Bake at 325 for 40-60 minutes until wooden pick inserted comes out clean. (Time may vary depending on size of pan you use.)Remove from oven and cool for about 10 minutes before removing from pan and placing on cooling rack. Serve warm with butter or cream cheese.
