zucchini bread

When my mother-in-law passed away on Xmas eve 2008 I was blessed with inheriting her recipe box. There are recipes for most any thing you can image. She also has who she got the recipe from. This is one of the best zucchini bread recipes I have had. I am normally not a fan of recipes that have a long list of ingredients but this is worth it.

Ingredients

  • 3 - eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 3 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 cups zucchini (grated)
  • 1 cup crushed pineapple (well drained)
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1 cup raisins (plumped)
  • 1 cup nut meats (chopped)

How To Make zucchini bread

  • Step 1
    Beat first 4 ingredients until thick.
  • Step 2
    Stir in and blend the rest.
  • Step 3
    Fold in nuts & raisins.
  • Step 4
    Pour in 2-5x9 pans.
  • Step 5
    Bake 350'-1 hr.
