This is my grandma's recipe that came from one of her friends who lives in the country

Ingredients

  • 1 c
    vegetable oil
  • 3
    eggs, slighlty beaten
  • 2 c
    sugar
  • 2 c
    grated raw zucchini peeled and deseeded
  • 2 tsp
    vanilla
  • 3 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/4 tsp
    baking powder
  • 1 tsp
    salt
  • 3 tsp
    ground cinnamon
  • 1 c
    walnuts

How to Make Zucchini Bread

Step-by-Step

  1. Combine oil, eggs, sugar, zucchini, and vanilla in a large mixing bowl. Blend well.
  2. Stir in flour, soda, baking powder, salt and cinnamon. Do not beat. Stir in nuts.
  3. Spoon in batter in floured and greased pan loaf. Bake at 325* for 1 hour and 15 minutes.
