Ingredients

  • 3 c
    all purpose flour
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    baking soda
  • 3/4 tsp
    salt
  • 1 tsp
    cinnamon
  • 1 tsp
    ground nutmeg
  • 2 c
    sugar
  • 3/4 c
    vegetable oil
  • 3
    large eggs
  • 2 tsp
    vanilla extract
  • 3 c
    shredded zucchini
  • 1 c
    chopped pecans or walnuts

How to Make Zucchini Bread

Step-by-Step

  1. Combine first 6 ingredients in large bowl; make a well in center of mixture.
  2. Combine sugar, oil, eggs and vanilla. stir well. Add to dry ingredients, stirring just until moistened. Stir in zucchini and nuts.
  3. Spoon batter into 2 lightly greased 8 1/2 x 4 1/2 loaf pans.
  4. Bake at 350 for 50 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pans on wire rack for 10 minutes; remove from pans and cool completelu on wire racks.
