Zucchini Bread

Ingredients

3 call purpose flour
-
1 Tbspbaking powder

1/2 tspbaking soda
-
3/4 tspsalt
-
1 tspcinnamon
-
1 tspground nutmeg
-
2 csugar
-
3/4 cvegetable oil
-
3large eggs
-
2 tspvanilla extract
-
3 cshredded zucchini
-
1 cchopped pecans or walnuts
How to Make Zucchini Bread
- Combine first 6 ingredients in large bowl; make a well in center of mixture.
- Combine sugar, oil, eggs and vanilla. stir well. Add to dry ingredients, stirring just until moistened. Stir in zucchini and nuts.
- Spoon batter into 2 lightly greased 8 1/2 x 4 1/2 loaf pans.
- Bake at 350 for 50 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pans on wire rack for 10 minutes; remove from pans and cool completelu on wire racks.
