She shared this recipe with me and I've made it now for 20 years or so now.
I've made it and taken it to work, and even tonight, during season, I got another request for the recipe. So....here it is! I hope you love it as much as we all have.
1 cvegetable oil
1 tspbaking soda
1/2 tspbaking powder
1 Tbspvanilla...i use madagascar vanilla
2 cgrated zucchini
1/2 cchopped pecans (optional)
How to Make Zucchini Bread
- With the first 3 ingredients - blend in MixMaster. Use the spatula blade, not the beater blade.
- Next 5 ingredients - Mix dry ingredients separately, then add to above mixture.
- Add final 3 ingredients, blending slowly but thoroughly.
- Grease and flour 2 small loaf pans. Fill 2/3 full. Bake at 350 degrees for approximately 55 to 60 minutes. Start checking at 45 minutes. Top will be brown and crusted.
Turn out on cooling racks after 10 minutes. Cool. Keep in frig.
