zucchini bread
I got this recipe from a family friend who used to make this recipe every time there was a church get together during the summertime. She shared this recipe with me and I've made it now for 20 years or so now. I've made it and taken it to work, and even tonight, during season, I got another request for the recipe. So....here it is! I hope you love it as much as we all have.

Ingredients
- 3` - eggs
- 2 cups sugar
- 1 cup vegetable oil
- 3 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 tablespoon vanilla...i use madagascar vanilla
- 2 cups grated zucchini
- 1/2 cup chopped pecans (optional)
How To Make zucchini bread

Step 1With the first 3 ingredients - blend in MixMaster. Use the spatula blade, not the beater blade.

Step 2Next 5 ingredients - Mix dry ingredients separately, then add to above mixture.

Step 3Add final 3 ingredients, blending slowly but thoroughly.

Step 4Grease and flour 2 small loaf pans. Fill 2/3 full. Bake at 350 degrees for approximately 55 to 60 minutes. Start checking at 45 minutes. Top will be brown and crusted. Turn out on cooling racks after 10 minutes. Cool. Keep in frig.
