zucchini bread

This is courtesy of Paula Deen. It is a wonderful bread when served warm and slathered with butter. I don't know Paula personally but I bet that is how she used to eat this bread and that is the way my family enjoys it too.

Ingredients
- 3 1/4 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon ground nutmeg
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 3 cups sugar
- 1 cup vegetable oil
- 4 - eggs, beaten
- 1.3 cups water
- 2 cups grated zucchini
- 1 teaspoon lemon juice
- 1 cup chopped walnuts or pecans
How To Make zucchini bread

Step 1Preheat oven to 350 degrees.

Step 2In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar.

Step 3In a seperate bowl, combine oil, eggs, water, zucchini and lemon juice.

Step 4Mix wet ingredients into dry. Add nuts and fold in.

Step 5Bake in 2 standard loaf pans, sprayed with non-stick spray for 1 hour,or unitl tester comes out clean OR baken in mini loaf pans for about 4 min.
