This is courtesy of Paula Deen. It is a wonderful bread when served warm and slathered with butter. I don't know Paula personally but I bet that is how she used to eat this bread and that is the way my family enjoys it too.

Ingredients

  • 3 1/4 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground nutmeg
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 - eggs, beaten
  • 1.3 cups water
  • 2 cups grated zucchini
  • 1 teaspoon lemon juice
  • 1 cup chopped walnuts or pecans

How To Make zucchini bread

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar.
  • Step 3
    In a seperate bowl, combine oil, eggs, water, zucchini and lemon juice.
  • Step 4
    Mix wet ingredients into dry. Add nuts and fold in.
  • Step 5
    Bake in 2 standard loaf pans, sprayed with non-stick spray for 1 hour,or unitl tester comes out clean OR baken in mini loaf pans for about 4 min.
