Every year I grow Squash. TONS of it...I have squash coming out of my ears. I try giving it away, then...I have to cook it. Until this year I had never attempted Zucchini Bread. I came up with this and I have a new favorite to make all summer! (maybe I'll try it with winter squash this year!)

all purpose flour
1 tsp
2 tsp
pumpkin pie spices
2 tsp
baking soda
2 3/4 c
1 c
vegetable oil
eggs, beaten
1/2 c
2 c
coarse grated zucchini
1 c
pistachio nuts, chopped
1 tsp
lemon juice

How to Make Zucchini Bread


  • 1Preheat oven to 350, spray 2 loaf pans with non-stick coating
  • 2in large bowl combine flour, sugar, salt, pumpkin pie spice, & baking soda.
  • 3In another bowl mix water, eggs, oil, lemon juice and zucchini. Pour into dry mix
  • 4fold in nuts
  • 5divide mixture into 2 loaf pans and bake for 1 hour or until toothpick (or a sharp knife because I never have picks) comes out clean.
