zucchini bread

Every year I grow Squash. TONS of it...I have squash coming out of my ears. I try giving it away, then...I have to cook it. Until this year I had never attempted Zucchini Bread. I came up with this and I have a new favorite to make all summer! (maybe I'll try it with winter squash this year!)

Ingredients

  • 3 cups all purpose flour
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spices
  • 2 teaspoons baking soda
  • 2 3/4 cups sugar
  • 1 cup vegetable oil
  • 4 - eggs, beaten
  • 1/2 cup water
  • 2 cups coarse grated zucchini
  • 1 cup pistachio nuts, chopped
  • 1 teaspoon lemon juice

How To Make zucchini bread

  • Step 1
    Preheat oven to 350, spray 2 loaf pans with non-stick coating
  • Step 2
    in large bowl combine flour, sugar, salt, pumpkin pie spice, & baking soda.
  • Step 3
    In another bowl mix water, eggs, oil, lemon juice and zucchini. Pour into dry mix
  • Step 4
    fold in nuts
  • Step 5
    divide mixture into 2 loaf pans and bake for 1 hour or until toothpick (or a sharp knife because I never have picks) comes out clean.
