Zucchini Bread

Every year I grow Squash. TONS of it...I have squash coming out of my ears. I try giving it away, then...I have to cook it. Until this year I had never attempted Zucchini Bread. I came up with this and I have a new favorite to make all summer! (maybe I'll try it with winter squash this year!)

  • 3 c
    all purpose flour
  • 1 tsp
  • 2 tsp
    pumpkin pie spices
  • 2 tsp
    baking soda
  • 2 3/4 c
  • 1 c
    vegetable oil
  • 4
    eggs, beaten
  • 1/2 c
  • 2 c
    coarse grated zucchini
  • 1 c
    pistachio nuts, chopped
  • 1 tsp
    lemon juice

How to Make Zucchini Bread


  1. Preheat oven to 350, spray 2 loaf pans with non-stick coating
  2. in large bowl combine flour, sugar, salt, pumpkin pie spice, & baking soda.
  3. In another bowl mix water, eggs, oil, lemon juice and zucchini. Pour into dry mix
  4. fold in nuts
  5. divide mixture into 2 loaf pans and bake for 1 hour or until toothpick (or a sharp knife because I never have picks) comes out clean.
