Nuts are optional, but I use chopped pecans, some people like unsalted sunflower seeds. This bread is sooo good!!!

Ingredients

  • 3 - eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 2 cups grated peeled zucchini
  • 2 cups all purpose flour
  • 1 teaspoon grated lemon (optional)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup nuts, finely chopped (optional)

How To Make zucchini bread

  • Step 1
    Beat eggs until light and frothy. Add sugar, oil and vanilla, mixing until thick. Add zucchini and stir throughly.
  • Step 2
    Stir in flour cinnamon, baking power, baking soda and salt. Add while stiring until smooth. Add chopped nuts and lemon rind.
  • Step 3
    Bake in two greased, floured loaf pans, about 1 hour at 350 degrees. It making muffins, it makes 24 muffins and bake at 350 for approx. 35 minutes.
