Nuts are optional, but I use chopped pecans, some people like unsalted sunflower seeds. This bread is sooo good!!!

Ingredients
- 3 - eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 tablespoon vanilla extract
- 2 cups grated peeled zucchini
- 2 cups all purpose flour
- 1 teaspoon grated lemon (optional)
- 1 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1 cup nuts, finely chopped (optional)
How To Make zucchini bread

Step 1Beat eggs until light and frothy. Add sugar, oil and vanilla, mixing until thick. Add zucchini and stir throughly.

Step 2Stir in flour cinnamon, baking power, baking soda and salt. Add while stiring until smooth. Add chopped nuts and lemon rind.

Step 3Bake in two greased, floured loaf pans, about 1 hour at 350 degrees. It making muffins, it makes 24 muffins and bake at 350 for approx. 35 minutes.
