Ingredients

  • 1 cup oil
  • 3 - large eggs
  • 2 cups raw, grated zucchini
  • 2 cups sugar
  • 3 teaspoons vanilla
  • 3.25 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 can chopped pecans

How To Make zucchini bread

  • Step 1
    Grease and flour 2 loaf pans.
  • Step 2
    In a large bowl, mix oil, eggs, zucchini, sugar and vanilla.
  • Step 3
    In another bowl, mix together flour, salt, baking soda, cinnamon and nutmeg.
  • Step 4
    Add flour mixture to zucchini mixture.
  • Step 5
    Add nuts.
  • Step 6
    Stir to combine mixtures.
  • Step 7
    Pour into prepared pans.
  • Step 8
    Bake at 350 for 45 minutes to 1 hour.
  • Step 9
    Cool 10 minutes and remove from pans.
