- 2 - eggs
- 1 cup - corn oil
- 2 cups - sugar
- 3 cups - zucchini
- 2 tsp - double strength vanilla extract
- 3cups - flour
- 2 tsp - baking powder
- 1tsp - salt
- 1 tsp - cinnamon
- 1/2 cup - nuts

How To Make zucchini bread

Step 1Preheat oven to 325 degrees.Grease and flour two 8.5 x 4.5 loaf pans.

Step 2In a larg mixing bowl beat the eggs well. Add the oil, sugar, grated zucchini and Vanilla. Cream together.

Step 3In a separate bowl,sift the flour,baking powder, salt and cinnamon.Add to the creamed mixture and beat until well blended.

Step 4Fold in the nuts.Bake at 325 for one hour or until a toothpick comes out clean.
