zucchini bread

Found this recipe in an old recipe book and done a little modifying. I have been making this bread for about 9 years now and just can't seem to make enough of it.

Ingredients
- 3 - eggs
- 1 cup oil
- 2 cups sugar
- 2 teaspoons vanilla extract
- 3 cups grated zucchini
- 3 cups flour (white or wheat)
- 2 teaspoons baking soda
- 1/2 teaspoon cinnamon
- 1 teaspoon salt (regular or sea salt)
- 3/4 teaspoon nutmeg
- 1/4 teaspoon baking powder
- 1 cup chopped dates (optional)
- 1 cup chopped pecans (optional)
How To Make zucchini bread

Step 1Beat eggs, oil,sugar, and vanilla until thick.

Step 2Stir in remaining ingredients and mix with large spoon until well blended.

Step 3Pour into 2 greased 9x5 inch loaf pans. Bake at 350 F. for 50 minutes or until a toothpick comes out clean.
