I always leave the skin on the zucchini. Gives the bread an interesting look.

  • 1 c
    white sugar
  • 1 c
    brown sugar
  • 3
    eggs beaten
  • 1 c
    vegetable oil
  • 2 c
    grated zucchini
  • 3 Tbsp
  • 3 c
  • 1 tsp
  • 1 tsp
    baking soda
  • 3 tsp
  • 1/4 tsp
    baking powder
  • 1/2 c
    chopped nuts (optional)

How to Make Zucchini Bread


  1. Combine sugar, oil & eggs - beat until blended
  2. Add zucchini and vanilla
  3. Sift flour with salt, soda, cinnamon & baking powder
  4. Stir into creamed mixture, add nuts
  5. Pour into two (2) well greased loaf pans
  6. Bake @ 325 degrees for 1 hour
