zucchini bread

I got this recipe from a friend after I started growing zucchini plants in my garden. I would end up with zucchini coming out my EARS, so I make a lot of this bread every Summer!

Ingredients
- 3 - eggs
- 2 cups sugar
- 1/2 cup vegetable oil
- 1/2 cup applesauce, unsweetened
- 2 cups zucchini, grated
- 3 cups flour
- 1 teaspoon baking soda
- 3 teaspoons cinnamon, ground
- 1 1/2 teaspoons salt
- 2 tablespoons vanilla extract
- 1/4 teaspoon baking powder
- 1 cup chopped walnuts
How To Make zucchini bread

Step 1Beat eggs until foamy. Add sugar, oil and applesauce. Mix well.

Step 2In a different bowl, combine flour, baking soda, cinnamon, salt and baking powder. Add to egg mixture and mix well.

Step 3Add vanilla & walnuts and mix well.

Step 4Stir in grated zucchini (if you have a dough hook on your mixer, it works well for this step)

Step 5pour into 2 greased loaf pans and cook in a 350 oven for 50-55 minutes.
