Every year in our garden we make sure we plant zucchini plants. We use it for different recipes but our favorite is zucchini bread. We put the whole zucchini, peal and all in the food processer and grate it. Then put 2 cups in each freezer bag and freeze it. When we want a loaf of bread in the winter I can thaw out a bag and its just like fresh. Or the baked bread freezes well also.

Ingredients For zucchini bread

  • 3
    eggs
  • 1 c
    canola oil
  • 2 c
    sugar
  • 2 c
    zucchini
  • 1 tsp
    vanilla extract
  • 1/4 tsp
    baking powder
  • 1 c
    nuts, walnuts or pecans broken in pieces
  • 3 c
    all purpose flour
  • 1 tsp
    salt
  • 3 tsp
    cinnamon
  • 1 tsp
    baking soda

How To Make zucchini bread

    Beat eggs, sugar, and oil till mixed well. Add vanilla. Stir in zucchini.

    Sift flour, salt, cinnamon, soda and baking powder. Stir into first mixture. Fold in nuts. Pour into 2 well greased loaf pans(9x5x3)

    Bake at 325 degrees for 60-75 minutes. Done when toothpick comes out clean. Let cool in pan for 10 minutes then remove and put on cake rack to cool. Cover with dish towel while cooling
