Ingredients

  • 1 1/2 c
    all-purpose flour
  • 1 c
    sugar
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1 large
    egg
  • 1 c
    mashed banana
  • 1/2 c
    vegetable oil
  • 1/2 tsp
    banana extract
  • 1/2 tsp
    vanilla extract
  • 1 c
    shredded zucchini
  • 1 c
    chopped pecans

How to Make Zucchini Banana Bread

Step-by-Step

  1. Preheat oven to 325 degrees Fahrenheit. In a large bowl, combine the flour, sugar, cinnamon, baking powder, baking soda, and salt.
  2. In a separate bowl, add the egg, banana, oil, and extracts; mix well.
  3. Stir into dry ingredients just until moistened.
  4. Fold in zucchini and pecans.
  5. Pour batter into three 5 3/4 x 3 x 2-inch mini loaf pans that have been coated with non-stick cooking spray.
  6. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool for 10 minutes before removing from pans to wire racks to completely cool.
