Not sure where this recipe came from . For as long as I can remember mom has made and froze this bread every summer . It was great in the middle of winter to pull a loaf out ..

1 cup oil
2 cups sugar
3 teaspoons vanilla extract
1 teaspoon cinnamon
3 cups self rising flour
2 cups zucchini
1/2 cup walnuts

How To Make zucchine nut bread

Step 1

Beat eggs, sugar oil and vanilla together.Add dry ingredints mix well.Stir in zucchini and nuts...

Step 2

pour into well greased and floured pans (2 bread pans or 4 mini loaf pans). Bake for 45 minutes to an hour or when golden brown. bake at 350*
