I was looking for a way to get more fruits vegetable and fiber into my "Day Care Children" and ran across this but I can't remember where. The kids love it!!

Ingredients

  • 1 stick
    butter
  • 1 c
    brown sugar
  • 2
    eggs
  • 1 c
    flour
  • 1 c
    whole wheat flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1 c
    mashed bananas
  • 1 c
    shredded carrots
  • 1/2 c
    chopped nuts

How to Make Whole Wheat Banana Carrot Bread

Step-by-Step

  1. Combine flour, soda, powder, salt and cinnamon and set aside.
  2. Beat butter for 30 second; add sugar and continue beating until fluffy.
  3. Add dry ingredients and bananas beating after each addition.
  4. Fold in carrots and nuts.
  5. Pour into 2 greased loaf pans (mine are 7 1/2 by 3 3/4) Bake at 350 degrees for 40 to 50 minutes.
