This is one of my favorite recipes. I get many people asking me to make more for them! You can also divide the batter into cupcake pans rather than a loaf pan.

Ingredients
- 1/2 cup poppy seeds
- 1 cup milk
- 1 cup butter
- 1 1/3 cups cane sugar
- 3 - eggs
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon lemon extract
- - zest of 1 lemon
How To Make ukrainian poppyseed cake

Step 1Preheat oven to 350 degrees F and adjust oven rack to middle position.

Step 2Heat the poppy seeds and milk in a small saucepan over medium heat. Remove from the heat just before the milk begins to boil. Set aside.

Step 3Cream the butter and sugar. Add the eggs one at a time, beating well after each addition.

Step 4Sift together the flour, baking powder, and salt.

Step 5In thirds, alternately beat into the butter and sugar the dry ingredients and milk. Add the lemon extract and zest at the end.

Step 6Lightly spray two loaf pans and divide the batter between the two pans. Bake 40-45 minutes or until a toothpick inserted in the middle comes out dry.
