This recipe is from my best friend ever, who is now up in heaven watching me bake. I think of her every time I make this

Ingredients

  • 3 cups all purpose flour
  • 3/4 teaspoon salt
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 - eggs, beaten
  • 1 cup vegetable oil
  • 4 large bananas, mashed
  • 8 ounces can of crushed pineapple, drained
  • 2 teaspoons vanilla
  • 1 cup cocoanut
  • 1 1/2 cups pecans

How To Make tropical banana bread

  • Step 1
    Preheat oven to 350 degrees and grease either 5 mini loaf pans or 2 regular sized loaf pans
  • Step 2
    Mix together the flour, salt, baking soda, sugar and cinnamon
  • Step 3
    Add to above eggs, oil, bananas, pineapple, vanilla --stir only until dry ingredients are moist. Do not over-stir. Then add pecans and cocoanut until all is blended
  • Step 4
    Pour into 2 greased loaf pans or 5 mini loaf pans. Bake at 350 degrees--45-50 minutes for the mini loaf pans or 60-70 minutes for the regular sized loaf pans or until tested done. Cool on wire rack. Slice and serve
