3/4 cvegetable oil
1 1/3 tspbaking soda
1 cchopped pecans
3/4 cgolden raisins
1 cpacked brown sugar. light or dark
1/2bag of chocolate chunks (optional)

- combine all ingredients together and stir until blended to one color.
DO NOT USE A BLENDER OR BEATER! Large spoon.
- Pour into 2 LARGE loaf pans that have been coated with Crisco and flour. (Or 4-5 disposable aluminum loaf pans sprayed with Pam.)
Bake for 55 minutes then start checking to see if done.
Done when toothpick comes out A L M O S T dry. (Or a SLIGHTLY firm top when touched, not wiggly.)
Dry toothpick is the death of this recipe. (Burned bottom)
Let cool for an hour before turning over to release pan. Tastes best when room temperature, believe it or not. (OR HOT WITH VANILLA BEAN ICE CREAM.)
