This has taken me years to perfect this recipe. You will need to go to the dentist after eating a loaf! The most delicious, moist bread you have ever had.

Ingredients

  • 2 cups sugar
  • 1/2 teaspoon salt
  • 2 1/4 - flour
  • 3/4 cup vegetable oil
  • 3 - eggs
  • 1 teaspoon vanilla
  • 1 1/3 teaspoons baking soda
  • 1/4 cup buttermilk
  • 1 cup chopped pecans
  • 4-5 - black bananas
  • 3/4 cup golden raisins
  • 1 cup packed brown sugar. light or dark
  • 1/2 - bag of chocolate chunks (optional)

  • Step 1
    Preheat oven to 350. In a large bowl mash all bananas to a pudding like texture. in a large cup mix buttermilk and soda together. (Will foam)
  • Step 2
    combine all ingredients together and stir until blended to one color. DO NOT USE A BLENDER OR BEATER! Large spoon.
  • Step 3
    Pour into 2 LARGE loaf pans that have been coated with Crisco and flour. (Or 4-5 disposable aluminum loaf pans sprayed with Pam.) Bake for 55 minutes then start checking to see if done. Done when toothpick comes out A L M O S T dry. (Or a SLIGHTLY firm top when touched, not wiggly.) Dry toothpick is the death of this recipe. (Burned bottom) Let cool for an hour before turning over to release pan. Tastes best when room temperature, believe it or not. (OR HOT WITH VANILLA BEAN ICE CREAM.) GET FAT AND ENJOY...
