My mother cut this out of a newspapere in Hawaii. There were a lot of tea rooms and this is probably an old recipe.

Ingredients

2 c
all purpose flour
2 tsp
baking soda
2 tsp
cinnamon
1/2 tsp
salt
1/4 c
nuts, chopped
1 c
oil
1 tsp
vanilla extract
1 1/2 c
sugar
2 c
carrot, grated
3
eggs

How to Make Tea Room Carrot Bread

Step-by-Step

  • 1Sift flour, soda, cinnamon, and salt. Make a well in the mixing bowl with the ingredients.
  • 2Add nuts, oil,vanilla, sugar, and carrots. Mix well.
  • 3Pour into a greased loaf pan. Let stand 30 minutes before baking.
  • 4Bake at 350 degrees for one hour.
  • 5Optional ingredients:
    1 C raisins or
    1/2 c coconut and 1/2 c raisins

    Add with the nuts, oil, vanilla, sugar, and carrots.
