sweet potato glazed doughnuts

These yummy doughnuts are from Paula Dean. Easy to make and Yummy. Makes a good size batch. I glazed some and sugared some.

Ingredients

  • 3 1/2 cups all purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 cup baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 cup cooked mashed sweet potato (cooled)
  • 2 large eggs, slightly beaten
  • - vegtable oil for frying
  • GLAZE
  • 2 cups powdered sugar
  • 3or4 tablespoons milk (or more)
  • 1/2 teaspoon maple or vanilla extract
  • - chopped pecans (optional)

How To Make sweet potato glazed doughnuts

  • Step 1
    In a medium bowl combine flour, sugar, baking powder, baking soda, cinnamon, and salt. Set aside
  • Step 2
    In a large bowl combine eggs, sour cream and sweet potato. Gradually add flour mixture. Turn dough out onto a heavely floured surface. Knead in flour with hands as needed (dough will be sticky). Roll out dough to 1/2 inch thickness. Cut out dough with a 2 1/4 inch round cutter. Cut out center of doughnuts with a 3/4 inch cutter if your cutter doesn't already have a hole cutter in it.
  • Step 3
    In a dutch oven, heat vegetable oil to 360 degrees. Cook doughnuts, in batches, in hot oil, 1 to 2 minutes per side. or until lightly browned. drain on paper towels, Ice top with icing sprinkle with chopped pecans
  • Step 4
    For Icing combine ingredents and stir well. add additional milk to desired consistency.
