How to Make Sweet Buttered Corn Cake
- In large mixing bowl combine baking mix, corn meal, sugar, and baking powder. Mix dry ingredients well.
- Add eggs and buttermilk, blend. Slowly pour in melted butter while continuing to blend. Finally add in drained corn and mix in.
- Pour batter into greased 9x13 baking dish and bake at 350 for 40-45 minutes or until cake is a deep golden brown. This is a very moist cake and does not require frosting.
