sweet buttered corn cake

Got this idea from my love of cornbread and was playing around with ingredients. What came out was a dish that reminded me of sweet buttered corn from the county fair. My 85 year old mother really like this and she is not easy to please when I cook.

Ingredients

  • 3 cups baking mix, such as bisquick
  • 3/4 cup yellow cornmeal
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 3 - eggs
  • 1 1/2 cups buttermilk
  • 2 sticks butter, melted
  • 2 cans corn, drained

How To Make sweet buttered corn cake

  • Step 1
    In large mixing bowl combine baking mix, corn meal, sugar, and baking powder. Mix dry ingredients well.
  • Step 2
    Add eggs and buttermilk, blend. Slowly pour in melted butter while continuing to blend. Finally add in drained corn and mix in.
  • Step 3
    Pour batter into greased 9x13 baking dish and bake at 350 for 40-45 minutes or until cake is a deep golden brown. This is a very moist cake and does not require frosting.
