sweet buttered corn cake

Got this idea from my love of cornbread and was playing around with ingredients. What came out was a dish that reminded me of sweet buttered corn from the county fair. My 85 year old mother really like this and she is not easy to please when I cook.

Ingredients
- 3 cups baking mix, such as bisquick
- 3/4 cup yellow cornmeal
- 1 cup sugar
- 1 tablespoon baking powder
- 3 - eggs
- 1 1/2 cups buttermilk
- 2 sticks butter, melted
- 2 cans corn, drained
How To Make sweet buttered corn cake

Step 1In large mixing bowl combine baking mix, corn meal, sugar, and baking powder. Mix dry ingredients well.

Step 2Add eggs and buttermilk, blend. Slowly pour in melted butter while continuing to blend. Finally add in drained corn and mix in.

Step 3Pour batter into greased 9x13 baking dish and bake at 350 for 40-45 minutes or until cake is a deep golden brown. This is a very moist cake and does not require frosting.
