- 2 large eggs
- 3/4 cup mayonnaise
- 2 cups flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 cup sugar
- 3/4 teaspoon salt
- 1 teaspoon cinnamon

Step 1In a big bowl, mash the bananas then add the mayo, eggs, and vanilla

Step 2In a separate bowl mix together the flour, baking soda and baking flour, salt and cinnamon

Step 3Pour the wet into the dry and mix until incorporated. Batter is sturdy, but not super thick.

Step 4Pour into a greased standard loaf pan. Let bake for about an hour, but start checking at 55. All ovens are different.
