butter room temperature
medium sized ripe bananas mashed
1Butter a 9x5 loaf pan. Heat oven to 350. Cream butter and sugar in a bowl until fluffy. Add bananas, egg yolks, vanilla, lemon juice, and baking soda. Mix well.
2Stir in flour. Beat egg whites until stiff. Gently fold into batter. Carefully stir in hot water.
3Scrape into prepared pan. Bake for about 45 minutes or until toothpick comes out clean. This bread freezes well.
