super moist banana bread

This has been by far my favorite banana bread recipe. It's moist and light!

Ingredients

  • 1/2 cup butter room temperature
  • 1 cup sugar
  • 3 - medium sized ripe bananas mashed
  • 2 - eggs, separated
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon lemon juice
  • 1 teaspoon baking soda
  • 1 1/2 cups flour
  • 1 1/2 tablespoons hot water

How To Make super moist banana bread

  • Step 1
    Butter a 9x5 loaf pan. Heat oven to 350. Cream butter and sugar in a bowl until fluffy. Add bananas, egg yolks, vanilla, lemon juice, and baking soda. Mix well.
  • Step 2
    Stir in flour. Beat egg whites until stiff. Gently fold into batter. Carefully stir in hot water.
  • Step 3
    Scrape into prepared pan. Bake for about 45 minutes or until toothpick comes out clean. This bread freezes well.
