This has been by far my favorite banana bread recipe. It's moist and light!

Ingredients
- 1/2 cup butter room temperature
- 1 cup sugar
- 3 - medium sized ripe bananas mashed
- 2 - eggs, separated
- 1/2 teaspoon vanilla
- 1/2 teaspoon lemon juice
- 1 teaspoon baking soda
- 1 1/2 cups flour
- 1 1/2 tablespoons hot water
How To Make super moist banana bread

Step 1Butter a 9x5 loaf pan. Heat oven to 350. Cream butter and sugar in a bowl until fluffy. Add bananas, egg yolks, vanilla, lemon juice, and baking soda. Mix well.

Step 2Stir in flour. Beat egg whites until stiff. Gently fold into batter. Carefully stir in hot water.

Step 3Scrape into prepared pan. Bake for about 45 minutes or until toothpick comes out clean. This bread freezes well.
