This has been by far my favorite banana bread recipe. It's moist and light!

  • 1/2 c
    butter room temperature
  • 1 c
  • 3
    medium sized ripe bananas mashed
  • 2
    eggs, separated
  • 1/2 tsp
  • 1/2 tsp
    lemon juice
  • 1 tsp
    baking soda
  • 1 1/2 c
  • 1 1/2 Tbsp
    hot water

How to Make Super moist banana bread


  1. Butter a 9x5 loaf pan. Heat oven to 350. Cream butter and sugar in a bowl until fluffy. Add bananas, egg yolks, vanilla, lemon juice, and baking soda. Mix well.
  2. Stir in flour. Beat egg whites until stiff. Gently fold into batter. Carefully stir in hot water.
  3. Scrape into prepared pan. Bake for about 45 minutes or until toothpick comes out clean. This bread freezes well.
