super banana bread
I have made this for years to share with friends, coworkers or even a treat for the fire station. It's nice because it makes to beautiful loaves. I sometimes use lemon juice and zest in place of orange and walnuts in place of pecans. This is a very adaptable recipe.

Ingredients
- 1 package reduced-fat cream cheese
- 1/2 cup butter, softened
- 1 1/2 cups sugar
- 2 - eggs
- 1 1/2 cups mashed ripe bananas aprox 3 medium
- 1/2 teaspoon vanilla extract
- 3 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup pecans, seperated
- GLAZE
- 1 cup confectioners' sugar
- 3 tablespoons orange juice
- 1 teaspoon orange zest

Step 1In a large bowl with mixer paddle beat cream cheese,butter and sugar untill blended. Add eggs one at a time beating well after each. Add bananas and vanilla, beat until creamy. Combine flour, b.powder, b.soda and salt: gradually add to creamed mixture juste untill moist. Fold in 1/2 c. nuts.

Step 2Transfer into two 8x4 in. loaf pans coated with cooking spray. Cover with remaining nuts. Bake for 55-60 min at 350 until a knife comes out clean.

Step 3In a small bouwl, mix the glaze ingredients: drizzle over loaves. Cool for 10-15 min. before removing from pans to wire tack to cool. Makes 2 loaves (10-12 slices each)
