streusel rhubarb bread

I have a friend who supplies me with rhubarb from his garden and it is nice to make this bread ..it freezes very well.

Ingredients
- 1 1/2 cups packed brown sugar/
- 1/2 cup vegetable oil
- 1 cup egg
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 2 1/2 cups all purpose flour
- 1cc teaspoon baking soda
- 1 1/2 cups chopped fresh rhubarb or frozen
- 1 cup chopped pecans or walnuts
- 1 tablespoon lemon zest,
- - topping
- 1/2 cup sugar
- 1/4 teaspoon cinnamon
- 1 tablespoon cold butter
How To Make streusel rhubarb bread

Step 1in a mixing bowl combine brown sugar and oil beat til well combined add egg, mix well, beat in buttermilk, vanilla and lemon zest combine the flour and baking soda, stir into brown sugar mixture just until combined. Fold in the rhubarb and nuts.

Step 2Grease two pans 8 -in x 4-in x 2 in pans pour batter into the pans.

Step 3For topping,,,combine sugar, cinnamon and butter and using 2 knives or pastry blender mix until it is crumbly and sprinkle over the batter...Bake in350F for 60 to 65 minutes or until a toothpick inserted in center comes out clean..cool for 10 minutes then turn out on wire racks to cool use serrated knife to slice the bread...freezes just great.
