strawberry bread w/key lime glaze

So many strawberries in my house! I am slowly trying to use them up. I have made scones, smoothies, strawberry cake and now I have a strawberry bread cooking in the oven. Everything I have made has been so good and been given high ratings from my boys. I hope you enjoy. Found the recipe on Allrecipes.com. I always change up others recipes so I am adding a glaze to the bread.

Ingredients

  • 2 cups fresh strawberries
  • 3 1/8 cups flour
  • 2 cups sugar
  • 1 tablespoon cinnamon, ground
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/4 cups vegetable oil
  • 4 - eggs, beaten
  • 1 1/4 cups chopped pecans

How To Make strawberry bread w/key lime glaze

  • Step 1
    Preheat oven to 350F. Spray with non-stick cooking spray 2-9x5 inch loaf pans.
  • Step 2
    slice strawberries, and place in medium bowl. Sprinkle lightly with with sugar, set aside.
  • Step 3
    In a large bowl, combine flour, sugar, cinnamon, soda; mix well. Blend strawberries, oil and eggs. Add to flour mixture just till moistened. Stir in pecans. divide batter into pans.
  • Step 4
    Bake for 45-50 minutes, or until tester comes out clean. Let cool in pans on wire rack for 10 minutes. Turn loaves out, and cool completely.
  • Step 5
    Optional Glaze: 1/2 cup powdered sugar and key lime juice. Consistency should be easy to drizzle over bread. I would do this while the bread is warm.
