strawberry bread
A favorite old recipe from the 1980s. I use frozen berries all winter and don't always do the topping. Sometimes I lightly press brown sugar into the raw top, but it really doesn't need anything. Great at breakfast or anytime.

Ingredients
- BREAD
- 3 cups mashed strawberries
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 cups sugar
- 1 teaspoon salt
- 1 1/4 cups oil
- 4 eggs, well beaten
- TOPPING (OPTIONAL)
- 1/2 cup reserved strawberry juice
- 8 ounces cream cheese
How To Make strawberry bread

Step 1To prepare the bread, drain 1/2 cup syrup from mashed strawberries to save for topping.

Step 2Mix all dry ingredients together and make a hole in the center.

Step 3Add the mashed strawberries, remaining juice, oil and eggs.

Step 4Mix by hand or on lowest speed until thoroughly combined.

Step 5Pour into 2 greased 9×5 pans.

Step 6Bake at 350 degrees F for 50-60 minutes.

Step 7Cool thoroughly on a wire rack.

Step 8To prepare the topping (if using), mix the saved juice with softened cream cheese. Drizzle over breads.
