strawberry bread
This is an old recipe I've been using since I was 9 years old. It's a great way to use up the bounty of strawberries in the summertime.

Ingredients
- 3 cups self rising flour
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 2 cups sugar
- 3 - eggs, well beaten
- 1 1/4 cups oil
- 1 1/2 cups fresh strawberries, pulsed for just a moment in a blender --or --
- 2 (10 oz) packages frozen strawberries, thawed and sliced
- 1 1/4 cups pecans, chopped
- - red food coloring, optional
How To Make strawberry bread

Step 1Combine flour, salt, cinnamon, and sugar.

Step 2Make a well in center of dry ingredients; add eggs and oil, stirring only until dry ingredients are moistened.

Step 3Stir in strawberries and pecans. Blend in food coloring, if desired.

Step 4Spoon batter into 2 lightly greased bread pans.

Step 5Bake at 350* for 1 hour or until bread tests done. Let stand overnight before slicing. (I don't know why the recipe calls for that, I don't do it, lol.) Yield: 2 loaves
