This is an old recipe I've been using since I was 9 years old. It's a great way to use up the bounty of strawberries in the summertime.

Ingredients

  • 3 cups self rising flour
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 2 cups sugar
  • 3 - eggs, well beaten
  • 1 1/4 cups oil
  • 1 1/2 cups fresh strawberries, pulsed for just a moment in a blender --or --
  • 2 (10 oz) packages frozen strawberries, thawed and sliced
  • 1 1/4 cups pecans, chopped
  • - red food coloring, optional

How To Make strawberry bread

  • Step 1
    Combine flour, salt, cinnamon, and sugar.
  • Step 2
    Make a well in center of dry ingredients; add eggs and oil, stirring only until dry ingredients are moistened.
  • Step 3
    Stir in strawberries and pecans. Blend in food coloring, if desired.
  • Step 4
    Spoon batter into 2 lightly greased bread pans.
  • Step 5
    Bake at 350* for 1 hour or until bread tests done. Let stand overnight before slicing. (I don't know why the recipe calls for that, I don't do it, lol.) Yield: 2 loaves
