Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 overripe bananas, mashed
  • 1 cup frozen whole, unsweetened strawberries, including liquid, thawed and diced
  • 1/3 cup milk
  • 1/3 cup canola oil
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup frozen chocolate chips (optional)
  • ICING
  • 1 1/4 cups powdered sugar
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons milk or water
  • 1 teaspoon strawberry extract
  • 1/8 teaspoon salt

How To Make strawberry-banana bread

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Grease & flour a 9x5 loaf pan. (I like to use bakers joy baking spray)
  • Step 3
    In a medium mixing bowl, combine flour, baking powder, baking soda, and salt. Set aside.
  • Step 4
    In a large mixing bowl, mix together the mashed bananas, sugar, milk, canola oil, egg and vanilla with an electric mixer on low until thoroughly combined.
  • Step 5
    Stir in strawberries, including liquid.
  • Step 6
    Gently stir the dry ingredients as well as the chocolate chips into the wet ingredients using a rubber spatula until just combined and moistened. Be careful not to overmix the batter!
  • Step 7
    Transfer to prepared loaf pan and bake for 60 to 65 minutes or until a toothpick inserted into the center comes out clean.
  • Step 8
    Cool ten minutes in pan then turn onto a wire rack and cool completely.
  • Step 9
    Prepare icing white bread is cooling.
  • Step 10
    Beat together the sifted powdered sugar the softened butter, milk or water, strawberry extract, salt, and food coloring to a medium bowl. Until smooth.
  • Step 11
    TIP: If the icing is too thick, you can add a bit more milk, or if it is too thin, a bit more powdered sugar as needed.
  • Step 12
    Spoon icing over the top of bread.
