Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 overripe bananas, mashed
- 1 cup frozen whole, unsweetened strawberries, including liquid, thawed and diced
- 1/3 cup milk
- 1/3 cup canola oil
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup frozen chocolate chips (optional)
- ICING
- 1 1/4 cups powdered sugar
- 2 tablespoons unsalted butter, softened
- 2 tablespoons milk or water
- 1 teaspoon strawberry extract
- 1/8 teaspoon salt
How To Make strawberry-banana bread

Step 1Preheat oven to 350 degrees

Step 2Grease & flour a 9x5 loaf pan. (I like to use bakers joy baking spray)

Step 3In a medium mixing bowl, combine flour, baking powder, baking soda, and salt. Set aside.

Step 4In a large mixing bowl, mix together the mashed bananas, sugar, milk, canola oil, egg and vanilla with an electric mixer on low until thoroughly combined.

Step 5Stir in strawberries, including liquid.

Step 6Gently stir the dry ingredients as well as the chocolate chips into the wet ingredients using a rubber spatula until just combined and moistened. Be careful not to overmix the batter!

Step 7Transfer to prepared loaf pan and bake for 60 to 65 minutes or until a toothpick inserted into the center comes out clean.

Step 8Cool ten minutes in pan then turn onto a wire rack and cool completely.

Step 9Prepare icing white bread is cooling.

Step 10Beat together the sifted powdered sugar the softened butter, milk or water, strawberry extract, salt, and food coloring to a medium bowl. Until smooth.

Step 11TIP: If the icing is too thick, you can add a bit more milk, or if it is too thin, a bit more powdered sugar as needed.

Step 12Spoon icing over the top of bread.
