This recipe is a favorite with my family. It is also a good way to sneak in vegtables in without the kids knowing!

Ingredients

  • 1 1/3 cups grated summer squash
  • 1 1/2 cups all-purpose four
  • 2 teaspoons cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup sugar
  • 1/2 cup oil
  • 2 teaspoons vanilla

How To Make squash bread

  • Step 1
    Preheat oven to 350 degrees. Coarsely grate squash. Mix dry ingredients, except sugar and blend well. Beat eggs until frothy. Add sugar, oil and vanilla to eggs and beat until lemon colored, about 3 minutes. Stir in squash. Add dry ingredients. Mix just until moistened. Pour into a slightly greased loaf pan. Bake 40 minutes or until toothpick inserted in middle of loaf comes out clean. Cool on wire rack. Remove from pan after 10 minutes.
