Ingredients

  • 3
    eggs
  • 1 c
    vegetable oil
  • 2 c
    sugar
  • 2 tsp
    vanilla
  • 2 c
    zucchini, coarsely shredded
  • 8 1/4 oz. can(s)
    can crushed pineapple, well drained
  • 3 c
    flour
  • 2 tsp
    soda
  • 1 tsp
    salt
  • 1/2 tsp
    baking powder
  • 1 1/2 tsp
    ground cinnamon
  • 3/4 tsp
    ground nutmeg
  • 1 c
    walnuts, finely chopped

How to Make South Pacific Zucchini Bread

Step-by-Step

  1. With a mixer, beat eggs to blend. Add oil, sugar and vanilla. Continue beating until thick and foamy.
  2. With a spoon, stir in zucchini and pineapple
  3. Combine all-purpose flour, soda, salt, baking powder, cinnamon, nutmeg, and walnuts. Stir in dry ingredients into zucchini mixture just until blended.
  4. Divide the batter equally between 2 greased and flour dusted loaf pans.
  5. Bake at 350* for 1 hour or until toothpick inserted in center comes out clean. Cool in pans for 10 minutes; turn out on wire racks to cool.
