Ingredients

  • 3 - eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 2 cups zucchini, coarsely shredded
  • 8 1/4 oz. cans can crushed pineapple, well drained
  • 3 cups flour
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1 cup walnuts, finely chopped

How To Make south pacific zucchini bread

  • Step 1
    With a mixer, beat eggs to blend. Add oil, sugar and vanilla. Continue beating until thick and foamy.
  • Step 2
    With a spoon, stir in zucchini and pineapple
  • Step 3
    Combine all-purpose flour, soda, salt, baking powder, cinnamon, nutmeg, and walnuts. Stir in dry ingredients into zucchini mixture just until blended.
  • Step 4
    Divide the batter equally between 2 greased and flour dusted loaf pans.
  • Step 5
    Bake at 350* for 1 hour or until toothpick inserted in center comes out clean. Cool in pans for 10 minutes; turn out on wire racks to cool.
