vegetable oil

zucchini, coarsely shredded
8 1/4 oz. can(s)
can crushed pineapple, well drained
3 c
2 tsp
1 tsp
1/2 tsp
baking powder
1 1/2 tsp
ground cinnamon
3/4 tsp
ground nutmeg
1 c
walnuts, finely chopped

How to Make South Pacific Zucchini Bread


  • 1With a mixer, beat eggs to blend. Add oil, sugar and vanilla. Continue beating until thick and foamy.
  • 2With a spoon, stir in zucchini and pineapple
  • 3Combine all-purpose flour, soda, salt, baking powder, cinnamon, nutmeg, and walnuts. Stir in dry ingredients into zucchini mixture just until blended.
  • 4Divide the batter equally between 2 greased and flour dusted loaf pans.
  • 5Bake at 350* for 1 hour or until toothpick inserted in center comes out clean. Cool in pans for 10 minutes; turn out on wire racks to cool.
