Ingredients
- 3 - eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 teaspoons vanilla
- 2 cups zucchini, coarsely shredded
- 8 1/4 oz. cans can crushed pineapple, well drained
- 3 cups flour
- 2 teaspoons soda
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 3/4 teaspoon ground nutmeg
- 1 cup walnuts, finely chopped

Step 1With a mixer, beat eggs to blend. Add oil, sugar and vanilla. Continue beating until thick and foamy.

Step 2With a spoon, stir in zucchini and pineapple

Step 3Combine all-purpose flour, soda, salt, baking powder, cinnamon, nutmeg, and walnuts. Stir in dry ingredients into zucchini mixture just until blended.

Step 4Divide the batter equally between 2 greased and flour dusted loaf pans.

Step 5Bake at 350* for 1 hour or until toothpick inserted in center comes out clean. Cool in pans for 10 minutes; turn out on wire racks to cool.
