Ingredients
- 1 1/4 cups cooking oil
- 5 - eggs
- 15 ounces can solid pumpkin
- 2 cups all purpose flour
- 2 cups sugar
- 2 boxes 3.4oz. instant coconut cream pie filling
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
How To Make soft coconut pumpkin bread

Step 1Preheat oven to 325F. Grease two 9x5x3 inch loaf pans. In the bowl of an electric mixer, mix oil, eggs and pumpkin. Then combine the remaining ingredients and add to the pumpkin mixture.

Step 2Divide the batter between the two loaf pans evenly. Bake one hour or until the loaves test done in the center.
