smith house banana date bread
Back in the 80's the Smith House in Dalonaga, Ga. was THE PLACE to eat if you went to the north Georgia mountains. This recipe was given to me by my daughter-in-law. I have baked it a million times and changed out fruit and nuts many times. It's always good.

Ingredients
- 2 sticks butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 large very ripe bananas
- 1/2 teaspoon vanilla extract
- 1 cup walnut pieces
- 1 cup chopped dates
How To Make smith house banana date bread

Step 1Combine bananas, sugar and soft butter in mixer bowl. Beat till soft and creamy. Add eggs and beat to incorporate well.

Step 2Combine dry ingredients and stir with whisk to mix. Stir in the nuts and dates. Add slowly to wet ingredients. Just till flour is combined.

Step 3Stir in vanilla and pour into a greased and floured 9"x5"x3" loaf pan. 350* preheated oven.

Step 4The recipe says to cook 1 hr. 15 min. but I have found that it depends on the pan, metal or glass. Also your oven. This cooks 1hr 10min in the oven I have now. When you smell it check on it. As soon as the center top is no longer soft and mushy it's done.

Step 5I've also cooked it in little mini aluminum pans for gifts. Just adjust the cooking time.
