rosie's pumpkin bread

I got this recipe from my good friend Rosie over 40 years ago. I make it year round - not just during the holidays. My five year old grandson loves it! He walked in the house after I had baked it one morning, said "I smell something, and his face lit up as he said "Pumpkin Bread"! It is super moist!

Ingredients

  • 2/3 cup shortening
  • 22/3 cups sugar
  • 4 - eggs
  • large can pumpking pie mix
  • 2/3 cup water
  • 3 1/3 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon (i don't measure - just shake!)
  • 1 teaspoon cloves
  • 2/3 cup chopped nutes (optional)
  • 2/3 cup raisins

How To Make rosie's pumpkin bread

  • Step 1
    Grease two loaf pans
  • Step 2
    Cream shortening and sugar.
  • Step 3
    Add eggs, pumpkin, and water.
  • Step 4
    Blend in dry ingredients.
  • Step 5
    Stir in nuts (if using) and raisins. (I don't measure raisins - just put in what looks right!)
  • Step 6
    Pour equally into two loaf pans. Make center lower than edges.
  • Step 7
    Bake 65-75 minutes until pick comes clean. I start at 65 minutes and go up little by little if necessary. I have never baked the entire 75 minutes.
  • Step 8
    Let cool in pans 10-15 minutes.
  • Step 9
    Turn out onto desired pan or tin foil. Enjoy!
