Based on a recipe I found online. I changed the spices, added more banana, and changed the sugar. This would be fabulous with other fruits, too. Strawberries, peaches, cherries ... Mmmmm.

1 cbutter, softened

1 cdark brown sugar, packed

6 lgeggs

2 call-purpose flour

2 tspbaking powder

2 tspcinnamon

1 tspginger powder

1/2 tspnutmeg

1 tspvanilla extract

4bananas, mashed
How To Make rich banana bread

1Preheat oven to 350 degrees F. Grease and flour a 9x5" loaf pan.

2In a medium bowl, stir together flour, baking powder, cinnamon, ginger, and nutmeg. Set aside.

3In a smaller bowl, mash the bananas and set aside.

4In a large bowl, cream together the butter and sugar until light and fluffy.

5Mix in the eggs one at a time, beating well after each addition.

6Blend in the flour mixture in three parts, beating well after each addition.

7Stir in the bananas and vanilla, mixing just enough to evenly combine. Pour batter into prepared pan.

8Bake in preheated oven for 90 minutes, until a toothpick inserted into the center of the loaf comes out clean.

9Cool in pan for 10 minutes, then turn out on a wire rack to cool completely.
