Ingredients

  • 1 1/2 cups brown sugar
  • 2/3 cup oil
  • 1 - egg
  • 1 cup buttermilk or sour milk*
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup rhubarb, chopped fine
  • 1/2 cup black walnuts (optional)
  • TOPPING
  • 1 tablespoon butter, softened
  • 1/2 cup sugar

How To Make rhubarb bread

  • Step 1
    Mix all the ingredients except the rhubarb and walnuts. Add them last and pour into 2 greased loaf pans. Sprinkle on top the soft butter and sugar mixture. Bake at 350° for 45 minutes.
  • Step 2
    *To sour milk add 1 teaspoon of plain vinegar or lemon juice to 1 cup of 2% milk and let sit for 10-15 minutes. The milk with curdle slightly.
