Ingredients
- 1 cup sugar
- 1/4 cup cornstarch
- 3 cups raspberries
- 2 cups biscuit mix
- 2/3 cup milk
- 2 - eggs
- 2 tablespoons canola oil
- 3 tablespoons sugar
- TOPPING:
- 3.4 ounces pkg instant vanilla pudding mix
- 1/2 cup sugar
- 1/4 cup cold butter, cubed
How To Make raspberry coffee cake

Step 1In a large saucepan, combine 1 cup sugar and cornstarch. Add raspberries; bring to a boil over medium heat. Boil for 2 minutes, stirring constantly. Remove from heat, allow to cool.

Step 2In a large bowl, combine biscuit mix, milk, eggs, oil and 3 Tbsp sugar. Spread 2/3 of the batter into a greased 9x13" baking pan. Spread with raspberry mixture. Spoon remaining batter over top.

Step 3For topping, combine pudding mix and sugar. Cut in butter until crumbly; sprinkle over batter. Bake at 350 degrees for 35-40 minutes.
