Ingredients

  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 - eggs
  • 2 cups sugar
  • 3/4 cup vegetable oil
  • 2 cups zucchini, grated, well drained
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

How To Make raisin zucchini bread

  • Step 1
    Preheat oven to 350. Sift first 5 ingredients.
  • Step 2
    Beat eggs in a large bowl until light.
  • Step 3
    Gradually add sugar and beat until thick and lemon colored.
  • Step 4
    Add oil in thin stream and beat well.
  • Step 5
    Mix in zucchini, nuts and raisins.
  • Step 6
    Add sifted dry ingredients and blend well.
  • Step 7
    Turn into greased and floured 12-cup bundt pan or 2 8x4 inch loaf pans.
  • Step 8
    Bake until tester inserted in center comes out clean, about 50 minutes. Let cool 5 minutes before turning out onto rack. Cool completely before slicing.
