raisin bran bread
Easy & delicious idea for a last minute breakfast potluck or holiday gift. It looks beautiful, too. I'm not sure where this recipe came from, but it could have originally been from a cereal box. Post Raisin Bran has the biggest flakes, which makes it look especially pretty for presentation, but any raisin bran cereal will do. =^..^=

Ingredients
- 4 tablespoons butter or margarine, divided into 2 + 2 tablespoons
- 2 cups raisin bran cereal, divided into 1-1/2 + 1/2 cup
- 1 1/4 cups milk
- 1 - egg
- 3/4 cup white sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon, see step #11
- 1/2 cup chopped walnuts, optional
- 1 tablespoon white sugar
- some - walnut halves for decorating, optional
How To Make raisin bran bread

Step 1Preheat oven to 350 degrees F. Spray cooking spray in 9 x 5 loaf pan.

Step 2Melt 2 Tablespoons of butter or margarine in a medium microwave-safe bowl. (I love my large PC Batter Bowl for this!) Stir in 1 1/2 cups of the cereal and milk until blended. Let stand 1 minute.

Step 3Add egg and 3/4 cup sugar, mixing well with a large spoon.

Step 4Stir in flour, baking powder, and cinnamon until well-blended.

Step 5Mix in the chopped walnuts, if desired.

Step 6Spread into prepared loaf pan.

Step 7FOR THE TOPPING: Melt the remaining 2 Tablespoons of butter or margarine in a small microwave-safe bowl. (I use my small PC Batter Bowl for this.) Stir in the remaining 1/2 cup cereal and 1 Tablespoon sugar until well-blended. Sprinkle over batter.

Step 8Gently press topping and walnut halves into the batter.

Step 9Bake 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan on wire rack, then remove bread from pan and cool completely...

Step 10...OR serve warm with butter or cream cheese. =^..^=

Step 11OPTION: In place of cinnamon, add 1 tsp. vanilla extract with the milk in Step #2.
