This moist loaf is perfect for those who don't like the candied fruits that go into a traditional fruitcake. Perfect for a brunch!

  • 1 pkg
    (15.6 oz) cranberry or blueberry quick bread mix
  • 1/2 c
    chopped pecans
  • 1/2 c
    raisins or dates
  • 1/4 c
    maraschino cherries
  • 1/4 c
    crushed pineapple, drained

How to Make Quick and Delicious Fruitcake - Steph


  1. Prepare the quick bread according to package directions. Stir in the remaining ingredients. Pour into a greased 9 x 5 x 3" loaf pan. Bake at 350 degrees for 55 - 60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack.
  2. The lady who gave me this recipe said she uses the cranberry quick bread during the Christmas holidays and usually the blueberry during the summer time. ENJOY!
